Pizza Soup Recipe
This is a recipe that I LOVE. Don’t let the name fool you! One day my husband and son asked me what was for dinner and I told them Pizza Soup they both looked at me like I was CrAzY! BUT they agreed to try it and every since that day it has been a HUGE hit in my house! This soup is weight loss surgery friendly! And very low in carbs! Its the great taste of pizza but without that carby crust! Here are my friends and fellow weight loss surgery peeps AJ and his wife Rebecca showing you how to make Pizza soup
1 lb Italian Sausage
Pepperoni, as much or little as you like
I 15oz can Italian diced tomatoes
1 small can sliced black olives
1 regular size can Rotel tomatoes
5 cans (or about 1 1/2 boxes) beef broth
chopped bell pepper
mushrooms, sliced, canned or whole, as much or little as you like.
Saute onion and pepper in the bottom of a soup pot, add crumbled sausage and brown
Add all other ingredients and let simmer for 30 minutes.
Ladle into bowl and top with freshly grated cheeses of your choice.
Remember, prepare your soup with the ingredients you like on a pizza. Add jalapeno’s if you like. I Like good old fashioned Mozzarella Shredded Cheese in mine (I like lots of it so my carbs go up a bit) You can also grate fresh Parmesan cheese or Monterrey jack over our soup. This is one easy, delicious soup.
Only 3 carbs per 1 cup serving!
